Ingredients
- For the glaze:
- 1 pckg. (18 1/4 oz.) yellow cake mix
- 1 can (8oz.) crushed pineapple drained
- 1 C evaporated millk
- 2 eggs
- 1/2 tsp. tsp. ground nutmeg
- 1/2 C flaked coconut
- 1 1/2 C confectioners' sugar
- 2 TBS. milk
- 1 to 2 drops coconut extract
- 2 TBS. flaked coconut, toasted

Preparation
Step 1
1. Combine first five ingredients. Beat on low speed just until moistened. Beat on high for 2 min. Stir in the coconut.
2. Pour into 2 greased loaf pans. Bake at 325 for 45-50 min.
3. For glaze combine milk and sugar until smooth. Add extract. Drizzle over loaves; sprinkle with coconut.
