Ingredients
- Okra - fresh or frozen!
- Canola oil
- salt/pepper

Step 1
Toss pinky-finger sized pods with a little canola oil, salt and pepper, then thread them on skewers with jalepeno slices. Grill the skewers unitl the okra turns bright green, about 2-4 minutes per side.
OR
Leave the pods whole, trim the tops. Toss with ample olive oil and salt to taste. Roast on a rimmed baking sheet at 400 deg - shaking the tray and turning them once or twice until crisp and brown - about 1/2 hour. Serve with lemon wedges.
OR
Blanch fresh okra for about a minute in boiling salted water, then refresh the pods in an ice-water bath. Serve them chilled with a dipping sauce of equal parts of soy sauce, rice vinegar, and water with a sprinkling of chopped scallions and toasted sesame seeds.
