Chicken Tostadas

Ingredients

  • Avacado Dressing:
  • 3 Tbs. vegetable oil
  • 2 Tbs. cider vinegar
  • 2 tsp. minced pickled jalapeno peppers
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1 avacado, chopped
  • 1 tomato. chopped
  • 2 Tbs. vegetable oil
  • 1 clove garlic, minced
  • 2 1/2 lbs. cooked chicken
  • 1 4-oz. can diced green chiles, drained
  • 1/2 c. sour cream
  • 4-6 flour tortillas, fried
  • 1/2 small head lettuce, sliced
  • 1 c. shredded Cheddar
  • 1-2 tomatoes, chopped

Preparation

Step 1

Combine all dressing ingredients; mix well. Refrigerate.

Heat 2 Tbs. oil. Add garlic and cook until tender. Add chicken, green chiles, and sour cream. Stir well. Cook until hot; keep warm.

Stack tostadas, topping with avacado dressing.
