Cuernavaco Casserole

Ingredients

  • 1 C cornmeal
  • 1 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 eggs, beaten
  • 1 C milk
  • 4 drops hot pepper sauce
  • 1/4 C veg. oil
  • 2 C cooked rice
  • 2 C (8oz) shredded cheddar cheese
  • 1 can (8 3/4oz) or 1C creamed corn
  • 1/2 C chopped onion
  • 2 TBL chopped green chilies

Preparation

Step 1

in sm. mixing bowl, mix cornmeal, S & P

in lg. mixing bowl, combine remaining
ingredients
blend in cornmeal mixture

pour into 12x7 1/2x2" greased baking
dish
bake@350 for 35-40 min
