Shrimp Alfredo

Ingredients

  • 1/2 c. butter
  • 1 lb. medium shrimp, peeled and deveined
  • 1 Tbs. minced green onions
  • 1/2 tsp. minced garlic
  • 9 oz. spaghetti, cooked al dente
  • 4 egg yolks
  • 1 c. half and half
  • 1 c. Parmesan cheese
  • 2 tsp. minced fresh parsley
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1

Melt butter in skillet and saute shrimp, green onions, and garlic for 3-4 minutes. Remove pan from heat. Stir warm pasta into shrimp mixture.

In another bowl, beat egg yolks, half and half and Parmesan. Add egg mixture to shrimp mixture and cook over moderate until sauce thickens, about 3-4 minutes. Do not boil. Stir in parsley, salt and pepper.
