Salsa Verde - for fish

This goes great with any fish - baked, barbequed, or grilled. You can even toss it on pasta with some Parmesan cheese.

Ingredients

  • 2 cloves garlic; peeled
  • 1 cup parsley leaves
  • 1/4 cup basil leaves
  • 2 anchovy fillets
  • 1 tsp. Dijon mustard
  • 1 tsp. capers
  • juice from 1 lemon
  • 1/2 cup olive oil, approximately

Preparation

Step 1

Chop the herbs, garlic, anchovies, and capers and place them in a bowl. Add the mustard and lemon juice. Whisk in the oil and add salt, pepper, and lemon juice to taste. For a smoother sauce, place ingredients in a blender and process until smooth.
