Ingredients

  • 1 1/2 cups hazelnuts
  • 1 1/2 cups sugar
  • 4 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 4 large eggs, slightly beaten
  • 3/4 (1 1/2 sticks) cup softened butter
  • 1 tablespoon Frangelico liqour

Step 1

Spread nuts on baking sheet and bake 10 minutes at 350°F until toasted.

Wrap in towel and rub most of the skin off, cool. (Or buy already chopped nuts and toast for approximately 5 minutes). Grind 1/2 cup very fine. Chop remaining 1 cup coarsely and reserve.

Cream butter and sugar, add eggs and Frangelico. Add dry ingredients slowly adding the reserved nuts last. Mix at slow speed until well blended.

Divide dough into four pieces. Form each piece into rolls about 1 1/2 inches wide. Flatten tops slightly. Place on parchment paper limed baking sheets.

Bake 15 to 18 minutes, just until tops are firm. Remove from oven, cool 10 minutes. Cut into diagonal slices about 1/2" thick.

Arrange cut side down on cookie sheet and bake for additional 10-15 minutes (turn cookies half way through baking time). Cool on wire racks.
