Spinach Salad with Cream Mustard Dressing

Ingredients

  • Dressing:
  • 1 lb. spinach, torn in pieces
  • 1/2 lb. bacon, fried crisp and crumbled
  • 1/4 lb. mushrooms, sliced
  • 1 c. sliced water chestnuts
  • 1/2 c. black olives, sliced
  • 2 hard-cooked eggs, mashed with fork while still warm
  • 1/2 tsp. salt
  • 1 1/2 tsp. sugar
  • 1 Tbs. pepper
  • 1 clove garlic, crushed
  • 1/2 c. virgin olive oil
  • 1 Tbs. Dijon
  • 5 Tbs. heavy cream
  • 1/4 c. red wine vinegar

Preparation

Step 1

One at a time, and in order, thoroughly blend all dressing ingredients into the mashed eggs. Do not substitute. When blended, whisk until smoth.

In large bowl, combine all salad ingredients and toss well with the dressing.
