Ingredients
- 9 med baking potatoes (3LBS)
- 2 C shredded cheddar cheese
- 1/4 C butter or marg
- 1 8oz carton sour cream
- 1 TBL chopped green onion
- S & P to taste
- paprika
Preparation
Step 1
in dutch oven add water to unpealed
potatoes just to cover
sprinkle w/ salt
bring to boiling - reduce heat
cover & simmer 30-35 min or until tender
drain - cool slightly
peal & shred potatoes w/ grater
in lg. mixing bowl combine potatoes,
cheese & butter
stir until butter melts
stir in sour cream, green onion, S & P
transfer to greased 2-QT casserole
bake, uncovered @325 for 45-50 min or
till heated through
sprinkle w/ paprika
