Ingredients
- 1 Tbl olive oil
- 1 large yellow onion, minced
- 4 cloves garlic, minced
- 1 C flour
- 1 lb cubed beef stew meat, cut into 1/4 inch pieces
- 1 can (15 oz) tomato sauce
- 1 can (28 oz) diced tomatoes
- 1 can (26 oz) ranch style beans
- 1/2 C chili powder
- 2 Tbl cumin
- @ Tbl Ancho chilli powder
- Salt and pepper
- Hot sauce
Preparation
Step 1
In large pan, heat olive oil. Add onion and garlic and sauté.
Meanwhile, palce flour in one-gallon resealable plastic bag. Add beef, seal bag and shake until beef is covered lightly with flour. Add beef to sauté pan and cook on high heat until onion is clear and beef is browned. Remove from heat and reserve.
In large mixing bowl, combine tomato sauce, diced tomatoes and beans. Add chilli powder, cumin and Ancho powder. Place meat mixture into bowl and mix well, so all components are well combined.
Place mixture into slow cooker and cook on low for 6-8 hours or until beef is very tender. Season to taste with salt, pepper and hot sauce, if needed.
Serve with grated cheddar cheese, sour cream or fresh chopped scallions on top if desired.
Makes 4-6 servings.
