Ingredients

  • 1 lb tomatillos, chopped into 1/2 inch pieces
  • 1/2 white onion
  • 3 tbsp finely chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 chiles in adobo
  • 1 tsp brown sugar
  • 1 cup crumbled queso anejo
  • tortilla chips

Preparation

Step 1

In a bowl, toss together tomatillos, onion, and cilantro.

Pour the EVOO in a small bowl, add 1 of the chiles, the brown sugar, and the salt and whisk until well blended. Taste and add another chile if desired.

Spoon dressing onto tomatillos, arrange on a platter and sprinkle with cheese, serving chips alongside.
