Walnut Raisin Shortbread Bars

Cookie meets walnut pie. This is an ooey, gooey and definitely rich and yummy shortbread bar. Don't let the oatmeal discourage you...SO much better (and gooey) than oatmeal cookies.

Ingredients

  • CRUST
  • 1 cup butter
  • 2 cup flour
  • 4 Tbsp brown sugar
  • FILLING
  • 6 eggs, beaten
  • 3 cup brown sugar
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup oatmeal
  • 1 cup raisins
  • 1 walnuts

Step 1

PreHeat oven to 350 degrees. I use a lasagna pan when I make any of my bars, because otherwise the are gone way too fast. These bars can be frozen, and will still be delicious and moist.

CRUST
Combine all crust ingredients, and press in 10×15 lasagna pan. Bake at 350 for 15 minutes

FILLING
Combine eggs, brown sugar, and vanilla. Once well combined add remaining ingredients and pour over crust once it comes out of oven the 1st time. Bake again for 25 -30 minutes
