Jellied Salad

This is a favorite at holiday times and for other special dinners. A definite keeper for sure!
Ingredients
- 1 1/2 cups boiling water
- 2 (3-ounce) packages Jello powder (lemon, lime, strawberry etc)
- 1 1/2 cups cold water
- 1/2 cup raw carrot, grated
- 1/2 cup pared apple, diced
- 1/2 cup walnuts, coarsely chopped
- 1 teaspoon salt
- Salad greens
- Mayonnaise or cooked salad dressing

Step 1
Pour boiling water over jello in medium bowl; stir to dissolve. Add 1 1/2 cups cold water. Set bowl in pan of ice; leave in ice, stirring occasionally, until mixture is consistency of unbeaten egg white–about 30 minutes.
Stir carrot, apple, walnuts, and salt into jello mixture until well combined. Pour into your favorite 5 cup mold; refrigerate until firm. To unmold: Run a small spatula around edge of mold. Invert over platter, shake gently to release. If necessary, place a hot, damp dishcloth over inverted mold; shake to release. Surround with salad greens, Serve with mayonnaise.
