Ingredients
- 12 medium potatoes (about 5 #), peeled
- 1 tsp salt, divided
- 3/4 c butter
- 2 c (8 oz) shredded cheddar cheese
- 1 c milk
- 2 eggs, beaten
- Chopped fresh or dried chives, optional

Preparation
Step 1
Place potatoes in a large kettle; cover with water. Add 1/2 tsp salt. Bring to a boil; cook until tender. Drain; mash potatoes.
In a saucepan over low heat, cook and stir butter, cheese, milk and remaining salt until butter and cheese are melted and mixture is smooth. Add to mashed potatoes; stir until blended. Fold in eggs. Spoon into a greased 3-qt baking dish.
Bake uncovered, at 350 for 40-45 minutes or until puffed and light golden brown. Sprinkle with chives if desired.
