Ingredients

  • 2 lbs. beets
  • 1 1/2 Tb olive oil
  • 2 Tb fresh basil
  • 2 Tb balsamic vinegar
  • 1 Tb brown sugar
  • 1/4 tsp salt

Preparation

Step 1

In a 13"X9" pan, toss beets with olive oil.
Roast at 450 degrees for 1 hour or until tender.
Cool and then peel the beets.
Dice beets.
Toss with the basil, balsamic vinegarm, brown sugar and salt.
