Hot and Spicy Buffalo Chicken Tenders

  • Vegetable oil for frying
  • 1/4 cup butter
  • 1/4 cup Franks buffalo sauce
  • 2 tablespoons Tabassco
  • 2 tablespoons Franks red hot
  • 1 dash ground pepper
  • 1 dash garlic powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon paprika
  • 1 teaspoon cayenne pepper divided
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 1 1/2 lb chicken tenders
  • Bleu cheese dressing
  • Celery sticks

Step 1

Heat oil in a deep fryer to 355 degrees. You want just enough oil to cover the wings entirely -- an inch or so deep at least.

Combine the flour, paprika, cayenne powder, and salt in a small bowl. If the chicken is frozen, be sure to defrost and dry them. Put the chicken in a large bowl and sprinkle the flour mixture over them, coating each piece evenly. Put the chicken in the refrigerator 60 to 90 minutes. This will help the breading to stick to the chicken when fried.

Combine the butter, hot sauce, ground pepper, crushed pepper, 1/2 tsp cayenne pepper, and garlic powder in a small saucepan over low heat. Heat until the butter is melted and the ingredients are well-blended.

Put 5 chicken tenders in the hot oil and fry 8 to 10 minutes or until they begin to turn dark brown. Remove from the oil to a paper towel to drain. Continue with the rest of the chicken. Don't let them sit too long, because you want to serve them hot.

Quickly put the tenders in a large bag. Add the hot sauce and toss, coating all of the chicken evenly.

Serve with bleu cheese dressing and celery sticks on the side.
