Ingredients
- 3 TB Butter
- 1 Onion, chopped
- 1 Green Pepper, chopped
- 2 Stalks Celery, chopped
- 2 cans Kidney Beans, drained
- 2 8oz cans Tomato Sauce
- 2 cups cooked Corn
- 2 cans Diced Tomatoes (I used diced tomatoes with green chilis)
- 2-3 tsp Chili Powder
- 1 tsp Ground Cumin
- 2 cloves Garlic, minced
- 1 tsp dried Basil
- 1 tsp dried Oregano
- 1 Bay Leaf
- 1 cup Raisins or Craisins
- 1 cup Cashews
Preparation
Step 1
In large pan melt the butter. Sauté the onion, green pepper and celery about 10 minutes. Add the beans, tomato suce, corn, tomatoes, chili powder, cumin, garlic, basil, oregano, and bay leaf. Bring to a bil, reduce heat and simmer about 30 minutes to blend flavors. Stir in the raisins and cashews and continue to simmer until raisins are plum and cashews are tender, about 20 minutes. Serve with your favorite toppings.
