    slices bacon

    lg yellow onion, chopped

  • 1

    med green bell pepper, chopped

  • 1

    med(about 3 lbs) head green cabbage, cored and shredded

  • ¼

    cup chili powder

  • kosher salt

  • 14.5 oz can diced tomatoes and green chilies


in a 12 in skillet, cook the bacon until crisp. remove the bacon to paper towels to drain, but leave the grease in the skillet. crumble the bacon and set aside. in the reserved bacon greae, cook the onion and green pepper until limp, about 5 min. add the cabbage and cook until limp but not soft, 3-5 min. add the chili powder and salt to taste. add the tomatoes and simmer until just heated through. the slaw will be slightly crisp. adjust seasoning and sprinkle the crumbled bacon over the top.
