Blueberry Muffins

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 4 eggs
  • 2 cups sour cream
  • 4 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups blueberries
  • Melted butter and sugar (see below for dipping)

Preparation

Step 1

Preheat oven to 400 degrees.
In a large mixing bowl, cream together 1 cup butter, 1 cup sugar and vanilla. Add eggs and beat and then blend in sour cream and set aside.
In a separate mixing bowl, stir together flour, baking powder, baking soda and salt; fold into creamed mixture gently (DO NOT OVER MIX).
Fold in blueberries and spoon into muffin pans 3/4 full and bake muffins 24 to 26 minutes. To test for doneness, insert a toothpick if it comes out “clean,” your muffins are done. Transfer to cooling racks and while still warm, dip muffin tops in melted butter and then sprinkle with sugar.
