Cashew Chicken with Ginger

Ingredients
- 1 1/2 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 Tbsp toasted sesame oil
- 3/4 cup cashews
- 1 Tbsp minced fresh ginger
- 1/3 cup low-sodium soy sauce
- 1 Tbsp chili garlic sauce
- 1 cup diced scallions
Preparation
Step 1
Cook chicken in a saucepan of boiling, salted water until cooked through, 4-5 minutes; drain.
Heat oil in a wok or skillet over medium-high heat. Add cashews; stir-fry until fragrant, 1 minute. Add ginger and stir-fry 30 seconds. Stir in soy sauce and garlic chili sauce, then add cooked chicken; stir-fry 2 minutes more. Stir in scallions and serve.
