Green Beans And Peas With Celeriac And Mango

Ingredients

  • 1 pound green beans trimmed
  • 1/2 cup shelled green peas
  • 1/2 pound celeriac peeled, and cut into matchsticks
  • 1/4 cup olive oil
  • 3 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • Sea salt to taste
  • Sugar to taste
  • 1 ripe mango peeled, pitted, and cut into 1/4" by 1 1/2" pieces

Step 1

Cook the green beans in boiling salted water for 3 minutes. Add the peas and cook for 3 more minutes. Drain and transfer to a bowl. While the vegetables are still hot, add the celeriac and mix well.

In a small bowl, combine the olive oil, vinegar and mustard. Season with salt and sugar to taste; mix well.

Pour the dressing over the beans, peas and celeriac. Toss. Add the mango, mix gently and serve.

This recipe yields 6 servings.
