Ingredients
- Pudding:
- 6 c. whipping cream
- 2 c. milk
- 1 c. sugar
- 20 oz. good quality white chocolate, broken into small pieces (can grate in food processor)
- 4 whole eggs
- 15 egg yolks
- 24 " loaf French bread, sliced 1" thick (use stale bread or slice the bread and then dry in a 275 degree oven)
- Sauce:
- 8 oz. white chocolate, broken into small pieces
- 1/2 c. whipping cream
- 1 oz. dark chocolate, grated (opt.)
- (Generally, good idea to make more sauce)
Preparation
Step 1
1. In large sauce pan, heat the whipping cream, milk and sugar over medium heat. When hot, take off the heat and add the white chocolate pieces. Stir until melted.
2. Combine the whole eggs and egg yolks in a large bowl. Slowly pour the hot cream mixture into the eggs in a steady stream, whipping the eggs as you pour.
3. Place the stale sliced bread in a big bowl (i break it into cubes, but you don't have to). Pour 1/2 of the bread pudding mix over the bread. Use your fingers to press the bread into the mix so that it absorbs the liquid and becomes soggy. Pour in the remaining mix.
4. Heat oven to 350 degrees.
5. Put mix into baking pan (single recipe requires larger than a 9x13). Cover with aluminum foil and bake for one hour. Take off the foil and continue to bake for an additional 30 minutes until it is set and gold brown.
6. To make the sauce, bring the cream to a boil in a small saucepan, stirring constantly. Take off the heat and add the white chocolate, stir until completely melted and smooth. Spoon over the bread pudding.
7. Sprinkle with grated dark chocolate and serve.
