Ingredients
- BANANAS FOSTER SYRUP:
- 4 slices french bread
- 4 large eggs
- 1 1/2 cups milk
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- 3 tablespoons unsalted butter
- 1/2 cup brown sugar
- 1/2 cup maple syrup
- 1 tablespoon dark rum
- 1/4 teaspoon cinnamon
- When mixture is syrupy - add:
- 1 1/2 cups banana cut into 1/2" pieces
- 1 1/2 cups pineapple chunks
- 1 tablespoon pecans chopped and toasted
- Toss fruit in syrup just until heated through, 1 minute. Spoon over French Toast.
- APPLE TOPPING OR FILLING:
- 1 tablespoon unsalted butter
- 3 cups jonathan apples - diced and peeled
- 1/2 cup golden raisins
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon kosher salt
- 1 tablespoon lemon juice - fresh is best.
- 1 teaspoon vanilla extract
- 2/3 cup apple butter

Preparation
Step 1
French Toast:
Preheat oven 375
Preheat skillet with 1 tablespoon of vegetable oil
Whisk the eggs, milk, sugar, vanilla and salt
Place bread in shallow pan and pour mixture over bread and soak for 1 to 1 1/2 minutes.
Brown both sides in skillet and place on baking sheet and bake for 10 minutes.
Apple Topping or Filling:
Melt butter in large saute pan over medium heat. Add apples, raisins, brown sugar, cinnamon and salt. Saute until apples begin to soften, 3-5 minutes. Remove from heat and stir in lemon juice, vanilla and apple butter.
