Peanut Brittle

Ingredients

  • 3 cups white sugar
  • 1 cup corn syrup
  • 1 cup water
  • 1 tsp. vanilla
  • 2 cups raw peanuts
  • 1/2 cup butter
  • 1 1/4 tsp. baking soda

Preparation

Step 1

Mix sugar, syrupand water in a large saucepan. Bring to a boil, stirring constantly until candy thermometer reads 240F. Still stirring, add vanilla, peanuts and butter. When past 300F, add baking soda(will bubble up), stir until mixture has consistancy of caramel. Pour out on a heated, greased cookie sheet. Spread evenly, and quickly with a spatula. Allow to harden. Break into pieces. Makes about 2 lbs.
