Carmelized Brussels Sprouts with Pistachios

Ingredients

  • 4 T butter
  • 4 msall red onions, thinly sliced
  • 1/4 C + 2 T wine vinegar
  • 4 lbs brussels sprouts
  • 2 T sugar
  • Salt & pepper
  • 1/2 C pistachios, coarsely chopped

Preparation

Step 1

Melt butter in large deep skillet. add onions & # T of vinegar & cook over mod heat til they begin to brown, 5-6 min. Steam brussels spoouts til crisp, 5-6 min. add to onions. Stir in sugar & remaining 3 T vinegar & cook over mod heat, tossing til brussel sprouts are tender and lightly caramelized, 8-10 min. season with salt & pepper. Transfer to bowl, garnish with pistachios.
