Warm Beer Batter for Fish

Fillets should be cold when dipped and dropped.

Ingredients

  • 1.5 lbs. of fillets
  • 1 package dry yeast
  • 1 cup warm beer
  • 1 cup flour
  • pinch of salt
  • 1 egg white

Preparation

Step 1

In a warm bowl, dissolve 1 package yeast in 1/2 cup of warm beer. Add 1 cup of sifted flour, the salt, and stir. Cover with a cloth and let stand for 1/2 hour. Fold in egg white and use immediately. Add more beer as needed for a batter that just drips off spoon.
