Spaghetti with caramelized onions and breadcrumbs

Ingredients

  • 1 cup breadcrumbs
  • 1/2 cup plus 1 tbsp olive oil
  • 9 garlic cloves (3 crushed and 6 sliced)
  • salt
  • 1/4 tsp red pepper flakes
  • 1 lb spaghetti
  • 1 cup chopped parsley
  • 3 large onions, thinly sliced
  • 1 tbsp butter
  • pepper

Preparation

Step 1

Heat 2 tbsp oil in large skillet over medium. Add crushed garlic, cook 2-3 minutes. Add breadcrumbs and 1 tbsp oil, stir until well coated. Season with salt, cook until crisp and golden. Place on rimmed baking sheet lined with paper towels to drain and cool completely.
Heat 3 tbsp oil in large skillet over medium. Cook half of onions, stirring often, until caramelized and golden, 10-15 minutes. Repeat with rest of onions. Combine both batches in skillet, add sliced garlic, cook 3 minutes.
Boil water in large pot, add pasta and cook until al dente. Drain, reserving 1 cup water. Transfer spaghetti to skillet and toss well. Add rest of liquid, parsley and butter, season with salt and pepper. Mix well, then top with breadcrumbs and serve.
