Tortilla Espanola

  • 1/2 cup olive oil
  • 2 large potatoes, peeled and thinly sliced
  • 1 medium red onion, thinly sliced
  • 5 garlic cloves, finely chopped
  • salt and pepper
  • 5 eggs

Step 1

Preheat oven to 400 degrees. Heat oil in 8 inch skillet over medium. Add potatoes, onions and garlic, stir well to coat. Press into an even layer. Reduce heat, cover and cook for 10 minutes. Stir, season with salt and pepper, and press again. Cover and cook for 10 more minutes.
Whisk together eggs, salt and pepper. Pour eggs over potatoes in pan. Cook for 2 minutes.
Bake in oven until set, about 5 minutes. Invert or serve from pan.
