Ingredients

  • For Coating:
  • 6-8 " soft flour tortillas
  • 8 oz cream cheese, softened
  • 2 tbs sour cream
  • 1 tbs sugar
  • 1 tsp vanilla extract
  • 3/4 c sliced strawberries
  • oil for frying
  • 1 tbs cinnamon
  • 1/3 c sugar
  • For serving:
  • 1 c sliced strawberries

Step 1

Beat cream cheese, sour cream, 1 tbs sugar and vanilla. Fold in 3/4 c strawberries. Divide mixture evenly between 6 tortillas. Slather the filling in the lower third of each tortilla. fold the two sides of each toward the center and then roll up like a burrito. (secure with toothpick) combine 1/3 c sugar with 1 tbs cinnamon in shallow bowl and set aside. Line a lrg plate with paper towels. In about 5" deep saucepan place about 2-2 1/2 inch oil. and heat it over med high heat until it reaches 360 degrees. Fry the chimichangas until golden brown and crispy, about 2-3 mins and flip them as needed. Transfer to paper towel plate, drain for a min. then roll in cinnamon and sugar mixture. Dont forget to remove toothpicks.
