Ingredients

  • 12 oz ground chuck
  • 1 small fennel bulb chopped
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 1 TSP dried oregano
  • 2 bay leaves
  • 1/4 tsp black pepper
  • 1/2 cup orzo
  • 4 cups escarole shredded
  • parmesan cheese

Preparation

Step 1

Cook beef and then drain. Add fennel, onion and garlic. Cook until softened.

Add broth, oregano,water,bay leaves and pepper. Bring to a boil then simmer for 20 minutes.

Stir in orzo bring to a boil and then simmer for 10 minutes.

Stir in greens and cook until tender.
