Think Pink Salad

Ingredients

  • 1 (16-oz.) bag organic mixed greens
  • 1 avocado
  • 2 carrots, cut into thin coins
  • 2 tomatoes, cut into eights
  • 1/4 red cabbage, cored and shredded
  • 1 red onion, thinly sliced
  • 1 red bell pepper, seeded, deribbed and cut into strips
  • 4-oz. bean sprouts
  • Salad Dressing
  • 1/4 cup extra virgin olive oil
  • 1/3 cup apple cider vinegar
  • 1-2 teaspoons basil, crushed

Preparation

Mix dressing together and serve over salad.
