CORN AND AVOCADO SALSA

Ingredients
- 3 ears of fresh corn
- 2 avocados diced
- 1 red onion finely diced
- 1 T minced garlic
- 1 T cumin
- 1 tsp. crushed red pepper flakes
- 1/4 c chopped fresh cilantro
- 1/3 c red wine vinegar
- 2 T olive oil
- 1/4 c fresh lime juice
- salt/pepper to taste

Preparation
Step 1
. Remove corn silk and some of the husk layers, soak corn in some water and roast on a grill for best flavor. Corn can be boiled and sautéed as well
. Prepare vinaigrette with the other ingredients (except avocado0
. Dice avocado, cut corn off of cob
. Combine all ingredients, taste and adjust seasoning
