Ingredients
- (3) cans 14.5 oz. each light & fat-free chicken broth
- 1 pkg. (16 oz.) coleslaw mix
- 1 onion, peeled and chopped
- 1 Granny Smith apple, peeled, cored and chopped
- 1/3 cup chopped scallions
Preparation
Step 1
In saucepan over medium high heat, cook chicken broth, coleslaw mix, onion and apple for five minutes; stirring occasionally. Remove 2 cups mixture and puree for 2 minutes; return to pot. Stir to combine and cook 2 minutes more. Stir in scallions and serve.
