Cauliflower or Parsnip Fritters

Ingredients
- 2 lbs cooked/mashed cauliflower or parsnips
- 1/2 C flour
- 1 egg lightly beaten

Preparation
Step 1
Mix together, shape into small patties, about 2.5 to 3", about 1/4" thick. Fry in oil until brown on each side. If baking is preferred, add 1 T oil to the mix and bake at 400 F until done.
