Tuna Potato Salad

Ingredients
- 1 lb new red potatoes
- 1 TBS olive oil
- 4 tsp red wine vinegar
- 3 TBS mayonnaise
- 1 tsp sea salt
- 1 can (6 oz) flaked light meat tuna, in olive oil
- 1/2 cup minced red onion (or shallots)
- 1/4 cup minced capers

Preparation
Step 1
1. Place potatoes in a large pot and cover with water (by about 2"). Set over medium-high heat and bring to a gentle boil, then reduce the heat and cook for 15 minutes or until potatoes are tender. Remove potatoes from water and allow to cool.
2. Cut potatoes in half and place in a large bowl. In a separate bowl, whisk together olive oil, red wine vinegar, mayonnaise, and sea salt. Fold dressing, tuna, red onion, and capers into the potatoes. Taste and adjust seasonings as desired.
Makes 4 servings. Each serving = 7 Weight Watchers points.
