Shitake Mushroom Spinach Crustless Quiche with Feta

Ingredients

  • 1 TBSP - Butter, unsalted
  • 8 oz - fresh shitake mushrooms, sliced
  • 1/2 teas. minced garlic
  • 4 oz - red onion, chopped fine
  • 10 oz - frozen spinach, thawed and drained
  • 4 large eggs
  • 1 cup milk
  • 2 oz feta cheese
  • 1/4 cup grated parmesan
  • 1/2 cup shredded mozzarella
  • salt and pepper to taste

Preparation

Step 1

In a large skillet, saute the mushrooms and onions and garlic in the butter until tender. Remove from heat and add stir in the spinach. In a large bowl. whisk the eggs. Whisk in the milk, salt and pepper. Add the mushroom mixture and stir well. Stir in the cheese. Pour everything into a greased 10-inch pie plate. Bake at 350 35-40 minutes or until set and lightly browned. Let stand 10 minutes and serve.
