Fruit & Nut Loaf

Ingredients

  • 3/4 c flour
  • 1/4 t baking soda
  • 1/4 t baking powder
  • 1/2 t salt
  • 3/4 c firmly packed light brown sugar
  • 3 c coarsely chopped walnuts, pecans, hazelnuts, or almonds
  • 2 c dates & figs
  • 1/2 c dried fruits (apricot, apples, etc.)
  • 3 large eggs
  • 1 t vanilla

Preparation

Step 1

Preheat oven to 300 deg. Butter or spray 9x5 loaf pan.

In large bowl, whisk together the flour, baking soda, baking powder and salt. Stir in the brown sugar, nuts and dried fruit. Use your fingers to make sure that all of the fruits and nuts are coated.

In a separate bowl, beat the eggs and vanilla until light colored and thick. Add the egg mixture to the fruit and nut mixture and mix well. Spread into prepared pan, pressing to even it out.

Bake for about 60-75 minutes until batter is golden brown and has pulled away from the sides of the pan. Remove from oven and place on wire rack to cool. When cool, remove from pan. To store, cover with plastic wrap or aluminum foil. Will keep for about 2 weeks at room temperature or a couple of months in the refrigerator.
