Soup (Meatball Tortellini)

Ingredients

  • 8 oz ground sausage meat
  • 1/4 Cup grated parmesan cheese
  • 1/4 cup fresh parsley
  • 1 large egg, lightly beaten
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 2 Tbsp olive oil
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 quart chicken broth
  • 1- 9 oz pkg of refrigerated cheese tortellini
  • 1 cup sliced mushrooms
  • 2 chopped tomatoes (optional)

Preparation

Step 1

1. Combine the sausage meat, parmesan cheese, 2 Tbsp parsley the egg, garlic, 1/2 tsp salt and pepper to taste in a medium bowl, mix well with your hands until just combined. Form into 1-inch meatballs, and set aside.
2. Heat the oil in a large pot over medium heat. Add the meatballs and cook, turning, until golden, 3 to 4 minutes. Remove to plate.
3. Add carrots and celery to pot and cook until just soft, about 5 minutes. Add the broth and the meatballs.
4. Fry up the mushrooms and add to soup mixture.
5. Cook tortellini according to package directions. Add to broth when done.
(If adding chopped tomatoes add at this time)
Bring soup to a bowl for 3 minutes.
6. Pour soup in bowls and top with extra parmesan cheese.
