Ingredients

  • 2 1/2 C. Flour
  • 1 Cup 2 sticks butter cut into small pieces
  • 1/2 C. Sweetened shredded coconut
  • 2 C sugar
  • 4 large eggs
  • 1/2 C fresh lemon juice
  • 1 tsp. baking powder
  • Additional powdered sugar

Preparation

Step 1

Preheat oven to 350. Butter 9X 13" pan. Combine 2 C flour, butter, 1/2 C powdered sugar and coconut in processor until moist clumps form. Press into pan and bake 12-15" until light brown. Mix sugar through baking powder in processor until light yellow. Pour over crust and bake 12-15" remove from oven when light brown and sprinkle w/remaining powdered sugar.
