Pan fried Chilean Sea Bass, best fish I have ever eaten!

Ingredients

  • 2 Chilean Sea Bass portions (about 3/4 pound)
  • Italian Seasoned Bread Crumbs
  • Olive Oil
  • 1 tbl Sesame Oil
  • Salt
  • Pepper
  • Thyme
  • Garlic Powder
  • Parsley Flakes
  • Dill Weed
  • Curry Powder

Preparation

Step 1

Brush Sea Bass Fillets with a little Olive Oil. Sprinkle both sides with salt and pepper.
In frying pan heat some Olive oil to cook the Sea Bass, add 1 tbl of Sesame Oil to the Olive Oil and blend.
In a ziploc bag add bread crumbs enough to coat the fish, a little Thyme, Garlic Powder, Parsley, Dill and Curry powder. Shake to blend spices.
Place each Sea Bass in the bag 1 at a time and coat well, I pat in the breading to coat it well. Take fish out and can add a little more bread crumbs if need to both sides.
Saute in the Olive oil on Medium to Medium Low heat for about 5 minutes per side.
The breading makes a nice crisp coating on each side of the fish.
Remove fish and enjoy!
You can add a little white wine to the pan dripping to make a sauce but the fish is amazing without any sauce.
