Ingredients

  • 2 250g pkgs. cream cheese
  • 5 tbsp. cocoa powder, unsweetened
  • 20 tsp. no-calorie sweetener
  • 1 pkg. Knox unflavored gelatin powder
  • 1 cup boiling water

Preparation

Step 1

In large mixing bowl, cream together softened cream cheese, cocoa powder and sweetener until it starts to blend together. Dissolve gelatin powder in 1 cup boiling water, stirring to make sure it's fully dissolved. While mixing cream cheese combo, gradually add the gelatin mixture with mixer on low so not to splatter too much. When fully blended, pour into 10 snack-cups (cupcake liners) and refrigerate about an hour until it sets. If covered, keeps in the refrigerator for about a week.
