Easy Chicken Stock

Ingredients

  • rotisserie chicken carcass, or small fryer
  • 1 rib chopped celery
  • 2 chopped carrots
  • 1 chopped onion
  • 2 chopped leeks
  • peeled garlic cloves --optional

Preparation

Step 1

Place all ingredients in stockpot, add 12 cups of water and bring to a boil. Reduce heat to low and simmer 2-6 hours. Strain through a sieve. Makes 4-8 cups stock.
