Sautéed Basil Salad

Ingredients

  • 6 ounces cherry tomatoes, halved
  • 7 ounces garbanzo beans, rinsed and drained
  • 1/4 cup fresh basil leaves, divided
  • 2 1/2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

Step 1

In a mixing or serving bowl, mix together tomatoes and beans. Stir well to combine. Set aside.
Set aside 2 or 3 whole basil leaves. Chop or tear remaining basil leaves into small pieces.
Place chopped basil and oil into a skillet. Sauté or stir fry basil for about one or two minutes.
Place sautéed basil and oil into bowl with tomatoes and beans. Stir to combine, making sure tomatoes and beans are evenly coated with basil oil. Cover and let marinate at room temperature for about 20-30 minutes.
Garnish with whole basil leaves before serving.
