Ingredients
- 5 to 7 lb. roasting chicken
- 1 lemon, sliced
- 1 sprig fresh rosemary or thyme
- 2 tbsp. butter, melted
- 1 tsp. garlic powder
- 1/2 tsp. poultry seasoning
- 1 tsp. onion powder
- 1 tsp. paprika
- pepper to taste
Preparation
Step 1
Roll 2 to 3 pieces of aluminum foil into balls; place in a large oval slow cooker. Pat chicken dry. Place lemon slices inside chicken along with herb sprigs. Loosen skin on breast; rub melted butter and other seasonings under the loosened skin. Place on top of foil balls, breast side-up. Do not add any liquid to slow cooker. Cover and cook on low setting for 8 hours, or on high setting for 4 hours. Chicken will be very tender; use a wide spatula to carefully remove from slow cooker. For a crisper skin place under broiler on a baking sheet until crisp and golden.
