Homemade Lemon Pie

Ingredients
- 4 tbsp. corn starch
- 1 cup sugar
- 1 1/4 cup boiling water
- 1/2 tbsp. butter
- Rind and juice of 1 lemon
- 2 eggs
Preparation
Step 1
Mix the corn starch and sugar thoroughly; pour on the boiling water and boil it, stirring it constantly, for three minutes. Add the butter, lemon juice and rind, and beaten eggs. Mix them well. Let the mixture cool before putting it into the pie shell.
Prepare meringue or place another crust on top and bake for 40 minutes at 350.
