Ingredients

  • 1 cup chopped onion
  • 1/3 cup sugar
  • 1/3 cup ketchup
  • 1/4 cup orange juice
  • 3 tablespoons cornstarch
  • 3 tablespoons cider vinegar
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon grated peeled fresh ginger
  • 1 pound skinless, boneless chicken thighs, cut into 1 inch pieces
  • 2 (8 ounce) cans pineapple chunks in juice, drained
  • 1 large green bell pepper, cut into 3/4 inch pieces

Preparation

Step 1

Combine first 12 ingredients in an electric slow cooker. Cover and cook on low 6 hours or high 4 hours. Serve over rice.
