  • 1 stick unsalted butter
  • 4 oz semi sweet chocolate
  • 2 whole eggs, and 2 egg yolks
  • 2 teas flour
  • 1/4 c sugar

Step 1

Butter and flour 4 ramekins well and set aside.

Melt butter and chocolate over simmering water, let cool.

In a stand mixer with the whisk attachment beat sugar 2 whole eggs and egg yolks, and the flour until light and fluffy. Turn mixer up and add cooled chocolate and butter mixture. Mix only until blended.

Divide between the 4 ramekins. Bake on a cookie sheet at 450 degrees for 7-8 minutes. Remove with tongs and invert on a plate. Serve with ice cream or freshly whipped cream.

These can be made in the morning, and put in the refrigerator until ready to bake. Remove from frig about 1 hour before baking.
