Chocolate Eclair Cake

Ingredients

  • 1 pkg Honey Graham Crackers
  • 3 pkgs (large) Sugar Free Vanilla Pudding
  • 6 c Milk
  • 1-8oz Tub Whipped Cream
  • Icing
  • 2 oz Unsweetened Chocolate
  • 3 tblsp Butter
  • 1 tsp Vanilla
  • 1 1/2 c Powdered Sugar
  • 3 tblsp Milk

Preparation

Step 1

In 9x13 pan put a layer of graham crackers. Prepare pudding with above amount of milk and fold in whipped cream. Spread a layer of pudding on top of graham crackers. Then layer another layer of graham crackers and spread the remaining pudding over them. Chill in refrigerator for 8-10 hours.

In microwave put butter and chocolate for 1 min. Remove and stir until the rest of the chocolate melts. Mix in remaining ingredients. Stir completely. Pour over cake evenly, try not to spread with utensil very much. Do this as quickly as possible. As chocolate mixture cools it hardens and is difficult to spread.
