Buttermilk Biscuits

Ingredients

  • 2 cups cake flour
  • 2 cups all purpose flour
  • 4 Tsp salt
  • 1 Tbsp baking powder
  • 1 Tsp baking soda
  • 1/2 pound of unsalted cold butter cut into 1/2 inch squares
  • 1.5 cups buttermilk plus extra for brushing
  • 2 Tbsp unsalted melted butter

Preparation

Step 1

1) preheat oven to 425
2) combine flours, baking powder and baking soda in food processor and pulse to blend
3) add chilled butter and pulse until pieces are no bigger than small peas. DO NOT over process
4) transfer dough to large bowl, make well and pour in buttermilk
5) gently work the flour into the buttermilk.
6) dust a work surface with flour and pat dough into 3/4 inch thick rectangle and cut out 2.5 inch circles placing on baking sheet.
7) trimmings can be gently pushed together and reused for remaining biscuits one time
8) brush tops with buttermilk and bake for 18 minutes - half way through rotate the pan for even cooking
9) as soon as you remove the biscuits brush with melted butter and serve warm
