Jackson Salad

Chef’s Note: his salad was the original Brennan's of Houston house salad. Even when we take it off the menu for a while, guests order as if it's still on the menu. Some guests request a Jill Jackson Salad, named for Ella Brennan’s best friend. That’s when we shower 1/4 cup crumbled blue cheese over the top to gild the lily!

Ingredients
- 1/2 cup Jackson Dressing (see recipe)
- 8 cups loosely packed mixed salad greens, washed and dried
- 1 hard-cooked egg, finely chopped
- 5 slices bacon, cooked until crisp, chopped
Preparation
Step 1
Prepare Jackson Dressing; reserve.
In a large bowl, toss salad greens with dressing. Divide greens evenly among 4 salad plates. Sprinkle egg and bacon over greens.
